As many in the Bay Area already know the 9th Annual Dine About Town in San Francisco has started as of last Friday the 15th of Jan. and runs till the 31st of this month. Luis and I went down to Fresca in Noe Valley, San Francisco this past weekend to meet with Chef/Owner Jose Calvo-Perez to preview some of the dishes for his special dinner menu.

Jose was very gracious and allowed us to go behind the scenes as he prepared the two main courses for his dinner menu the “Sudado” and “Churrasco”. If you have never been to Fresca before this is a great time to see what Chef Jose’s “new Peruvian style cuisine” is all about. One of the most diverse cuisines in the world Peruvian food is a blend of many different cultures including, the native Incan, Spanish, Basque, African, Chinese, Japanese, Italian, and French at the very least! Jose a native of San Francisco has given his rendition of Peruvian cuisine a modern touch updating many traditional dishes.
The "Sudado"
As well as the great food Jose has teamed up with Luis to create a fantastic wine pairing meant to enhance his cuisine. The three wines are Barcino Brut Cava from Spain a great match for either of Jose’s two Ceviche’s for the 1st course, 2008 Quinta de Cabriz from northern Portugal a medium bodied aromatic unoaked white to be paired with the Pacific Sea Bass “Sudado” and 2006 Amplio Cabernet Sauvignon an atypical Californian Cab without all the oak and lower alcohol its pairs effortlessly with the NY Strip “Churrasco”. You have a choice of either the “Sudado” or “Churrasco” for the 2nd course. The finale is the “Lava de Chocolate” or “Tres Leche” cake!

The three course dinner menu and wine pairing is just under $40 a person and is only available at the Fresca Noe Valley Restaurant Sundays to Thursday’s, reservations are available via Open Table. Enjoy the 9th Annual Dine About Town and say hello to Chef Jose at Fresca in Noe Valley!
